Easy Birria Cooked in

Recipe: My version Meat: Chuck roast (3-4 lbs) Boneless short ribs - season with salt on both sides and sear in pan for a few min on each side. (Remove and set aside) SAUCE: 4 Roma tomatoes 🍅 1 whole white onion 🧅 8-12 garlic 🧄 3-4 Ancho chiles 🌶️ 6-7 guajillo chiles 🌶️ 1-2 tsp salt (adjust to taste) 1 tbsp oregano 2 tsp cumin 2-3 cups beef broth or water from the veggies .. taste and add more seasonings if needed/want (it will taste a little bitter but that’s normal and will cook away lol) - put all the veggies in the same pot you seared the meat in. Add water and bring it to a boil for 5-10 min. Remove and add everything in blender WITH the seasonings and broth - Put meat back in pot and pour the sauce over the meat. (If it’s too thick, add more broth). Add 3 bay leaves and into the oven at 325 degrees for 3-4hours. - Take out meat and shred. Reserve the consommé for dipping tacos - Dip corn tortilla into consommé (if tortilla is soft, fry it in pan with oil for a little before dipping into sauce to give you a crunchy texture) - Add cheese, meat, onions cilantro 🌿 and enjoy! You can add chipotle peppers if you like it spicy!
